I always thought it was weird that you Yanks say "Happy Holidays" yet you only have Christmas Day off. Over here it's the two days off but as consumerism is king, shops now open on Boxing Day so a lot of people only have the one day off. People in industries and the like can often have the whole two weeks off until January 2nd.
Wow...two weeks of for the holidays would be nice. I'm in school and I got a month off (from Dec. 3 to Jan. 3), but I also work and just get the one day (Dec. 25) off.
The reason that we say "Happy Holidays" is because of all of the political correctness crap that our country has gone through. We saw "Happy Holidays" to make all of the Jews (who celebrate Hannukkah) and Africans (who often celebrate Kwanzaa) happy. Plus, it's often assumed that saying "Happy Holidays" also means that you are including New Year's. Really, who cares? I say "Merry Christmas," unless I know for a fact that the person is Jewish.
